Quick Brown Rice

Last night was late before I sat down to supper. The news of the baby ducks was even worse when I got home. I was able to count them last night. We are missing 3 more beyond the 3 that were found dead. I don't think the cats could have eaten that many without a trace. It must have been a huge hunting bird of some sort that got them. The rest seem to be doing well in the new bigger pen with the adults. Hopefully they will be safer.

With all the farm animal troubles, dinner didn't start until well after dark. To save some time, I thought I'd try the Quick Brown Rice by Arrowhead Mills that has been sitting around the pantry. Regular brown rice takes about 45 minutes to cook. The box said it cooks in only 12 minutes. I followed the package instructions except instead of water, I put in Organic Chicken Broth. The rice was good, maybe a little crunchy (but I won't admit that I could have cooked it on too high a heat). Don't forget to add some salt into the cooking water. The rice tastes a lot better that way. Served with Gingered Shrimp, it was a satisfying meal.
