Craving Fried Chicken

One of the foods I truly miss is fried chicken. Not that I had it very often, probaby less than once a month. But it's just the idea of the being able to stop at the local chicken place and bite into the crunchy breading and the juicy chicken meat that really brings out the drools.

So tonight I was looking at this huge tray of chicken breasts. What should I make? Stir-fry was the original idea, but it just didn't seem very interesting. Hmmm....I wonder if I could make fried chicken strips. Will it work gluten-free? You bet it will. You can make just about anything gluten-free if you work at it. Oh, it was truly heautvenly!!! And dipping them in Annie's Naturals Organic Ketchup made them even better.
